It’s Monday night and you DO NOT feel like making dinner… you been there?? You have not been to the store but…there is some leftover barbecue in the fridge, eggs and some other stuff that just may work. My fave easy meal is def a frittata especially with leftovers. I have been known to use leftover pulled pork, sausage and my favorite brisket. This is the recipe I made Monday evening and I used a hodgepodge of things in my fridge and pantry. Here is the recipe and what you will need:

  • 1 Cast Iron Skillet
  • 6 eggs
  • 1/4 cup almond milk
  • 1 cup cheese of choice (I used cheddar)
  • Leftover brisket chopped up (4 thick pieces)
  • 1/2 can of corn (I used grilled)
  • 1/4 cup of chopped green onions
  • Pinch of house seasoning (AKA salt and pepper)
  • Olive oil

Directions: Pre heat the oven to bake at 400 degrees. Turn on the top burner to medium heat. Coat the cast iron hot pan with olive oil. When it is smoking a bit add the brisket and corn. Use the spatula to mix it around until warm. Whisk the eggs, almond milk and salt a pepper then pour into the brisket/corn mixture. Add the cheese and green onions and put in the oven for 12 minutes until firm. Let cool for 5 minutes, slice and enjoy.

PRO TIP: Add sour cream, extra cheese, salsa and green onions to top your tasty meal! 🙌🏻🔥
